Vegetable Curry

Today, is all about layers and levels. With as many different vegetables, Crazy Debbie decided to create this curry in stages, a bit at a time. Grab your spinning tops (and all ingredients) and descend into the kitchen.

What you need:

  • 4 small carrots
  • 1 head of garlic
  • 2 Bell peppers
  • 1 red chilli
  • 4 medium potatoes
  • 1 courgette
  • 300g closed cup mushrooms
  • 4 shallots
  • Tomato paste
  • 6 trimmed spring onion
  • 125g spinach
  • Butter
  • Light soy sauce
  • Worcester sauce
  • Lemon juice
  • 1 vegetable stock cube
  • Black pepper
  • White pepper
  • Cayenne
  • Smoked paprika
  • Ground Allspice
  • Celery salt
  • Chilli flakes
  • Turmeric
  • Ground ginger
  • Ground nutmeg
  • Cinnamon
  • Mild chilli powder
  • Fenugreek
  • Ground coriander
  • Cloves
  • Cumin
  • Garlic granules
  • Cardamon
  • Onion granules
  • Coriander leaf
  • Star anise

Start with the slicing and the dicing as if you're auditioning for the next Friday the 13th then with a splash of oil, melt two tablespoons of butter. Add the shallots, then after 2-3 minutes, add the mushrooms, garlic, spring onions and chilli. Level one done.

Once the mushrooms are soft and everything is fragrent, add the spinach. Put the lid on your pot and steam it. Add a couple of wooden spoons worth of tomato paste then make up 300ml of stock. Add to the pot with the rest of the veg. Level two done.

Along with the stock, to the pot goes:

  • 4 teaspoons of Worcester sauce
  • 3 teaspoons of soy sauce

Add the rest of the veg and combine. Because Crazy Debbie was batch cooking this, she added a second stock cube to top up the sauce. Once she was done telling the mushrooms they were icky. Cover and let the veg soften. Level three done.

Final stage.

To the pot goes:

  • A sprinkle of mild chilli powder
  • Sprinkle of white pepper
  • A sprinkle of black pepper
  • A moderate amount of coriander leaf
  • Moderate amount of nutmeg
  • A sprinkle of celery salt
  • A sprinkle of cloves
  • A moderate amount of ground coriander
  • A sprinkle of onion granules
  • Four star anise
  • A sprinkle of ginger
  • A moderate amount of Fenugreek
  • A sprinkle of Cardamon
  • A sprinkle of cinnamon
  • A fuckload of garlic granules
  • A sprinkle of chilli flakes
  • A sprinkle of smoked paprika
  • A moderate amount of ground Allspice
  • A sprinkle of cayenne
  • A fuckload of cumin
  • A fuckload of turmeric

As each spice is added, this will thicken the sauce so add a small amount of water just to loosen things up.

Last thing to go into the pot is a couple of squirts of lemon juice. Stir it through and you're ready to plate.
