The braised pork belly was tender and well braised with a full, homely and aromatic sweet flavour, apparently from roasted scallions, galangal, garlic, star anise, cardamom, bay leaves and mirin. The skin was gummy and sticky like mochi, superbly uncloying. The stewed cabbage was tender and flavourful, and the tau kwa was similarly braised nicely.
