Amazing Hungarian Mushroom Soup

Ingredients:

  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb mushrooms, sliced (choose a variety like button mushrooms, cremini, or porcini for depth of flavor)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 4 cups vegetable or chicken broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour (or a gluten-free alternative)
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened and fragrant, about 5 minutes.
  2. Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown, about 8-10 minutes.
  3. Stir in the paprika and dried thyme, and cook for another 2-3 minutes to toast the spices.
  4. Pour in the vegetable or chicken broth, and bring the soup to a simmer. Let it cook for 15-20 minutes to allow the flavors to meld together.
