Good morning, my friends. I hope you're well. Our forecast for today: 84°, partly cloudy, no rain, winds are from the east northeast at 5-10 miles per hour, and humidity is sitting at 68%.
We got a surprise last night! Rain! We had a popup storm roll through. I'm thankful. It added some water to the fish tank.
Supper was halfway decent. It tasted way better than it looked. Not gonna lie. It looked awful. Basically, you take boneless raw chicken, put some salt and pepper on it. I used boneless, skinless chicken tenders. You put some oil in the pressure cooker, sautee the chicken for a minute or two, add a cup of salsa and stir it around, and then pressure cook on high for 20 minutes. Let it release naturally and then break the chicken up. The recipe recommended soft corn tortillas, but I used crunchy corn shells. Not bad! Chicken tacos.
My medical appointment went well yesterday. She added on some enzymes to help my digestive system heal. Kind of pumps up the okra supplement that I'm already taking. I'm to stay away from gluten for a couple of months to ease my system a little. Back to gluten free for me. At least for a couple of months. *sigh*
Anyhoo. Laundry is done. Just need to fluff a load and get it folded and put away.
I'm super tired today. It's so nice out. I'd love to go work out in the yard, but I don't have the strength or the energy today. Maybe I could get some boxes taken care of. I don't know. I'm just really tired today.
The ledgers need balancing, though. I still have yet to put my registration sticker on my car. Supper tonight is burgers and tots.
