Here's a delicious recipe for Homemade Cauliflower "Mac & Cheese" that's low-carb and packed with flavor:
Ingredients:
1 medium head of cauliflower, cut into florets
2 tablespoons butter
2 cloves garlic, minced
2 cups shredded cheddar cheese
1/2 cup heavy cream
1/4 cup cream cheese
1 teaspoon Dijon mustard
1/2 teaspoon paprika
Salt and pepper, to taste
Optional toppings: crispy bacon bits, chopped chives, breadcrumbs (for added crunch)
Instructions:
Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-6 minutes, or until just tender. Drain the cauliflower and set aside.
In the same pot, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Reduce the heat to low and add the heavy cream, cream cheese, Dijon mustard, and paprika to the pot. Stir until the cream cheese is melted and the sauce is smooth and creamy.
