You need to balance nutrition, flavor, and convenience; you need something that kids never get tired of. Well, I have good news: you need look no further than Cheerios. Seriously, compare the nutrition label of Cheerios to any made-for-babies food. Then taste both of them, and try to figure out why Cheerios are healthier, and taste better, and are worlds cheaper. But, if you feel like switching it up, or are just excited to bake for your little one, give these spiced biscuits a try. They taste great, they're a great way to use up overripe bananas--fine to double or triple the recipe as needed--and when your kid gets a little older, it's a great bonding activity and way to introduce them to baking. They're versatile, too--we've made these with cinnamon, ginger, and cardamom, among others. And of course, there's no added sugar. We started these with our first kid, and now, when we make a batch, the kids will polish them off within a day--and of course, I sneak a few too. Hope you enjoy these as much as we do! Spiced Teething Biscuits - Makes a whole bunch; total time 30 minutes Ingredients - 1 ripe to overripe banana, mashed
- 2 tablespoons coconut oil
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla
- 1/2 teaspoon cinnamon, ginger, or spice of choice (adjust to taste)
- 1 cup flour
Directions - Preheat oven to 350. Line a baking sheet with parchment paper or a silicone mat.
- Combine all ingredients in a medium mixing bowl.
- Working with half the dough at a time, roll out on a lightly floured surface, until the dough is between 1/8- and 1/4-inch thick.
- Cut out with cookie cutters of choice!
- Alternately, if you're pressed for time, looking to make an easy-to-hold stick shape, or are, as Kendall has occasionally called me, "boring", use a knife to cut them into 3/4-inch strips, then cut the strips into 4-inch segments.
- Transfer to the prepared baking sheet, then bake for 12-15 minutes, until the edges have started to brown.
- Transfer to a cooling rack, and enjoy!
