Ingredients:

  • 1 lb ground beef or turkey
  • 1 medium zucchini, grated and excess moisture squeezed out
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup sugar-free marinara sauce

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with non-stick cooking spray or line with silicone muffin liners.
  2. Prepare Meatloaf Mixture: In a large mixing bowl, combine the ground beef or turkey, grated zucchini, Parmesan cheese, almond flour, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined.
  3. Form Meatloaf Cups: Divide the meat mixture evenly among the muffin tin cups, pressing the mixture down to form meatloaf cups.
  4. Add Marinara and Cheese: Spoon about 1 tablespoon of sugar-free marinara sauce on top of each meatloaf cup. Sprinkle shredded mozzarella cheese over the marinara sauce.
  5. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the meatloaf cups are cooked through and the cheese is melted and bubbly.
  6. Serve: Allow the meatloaf cups to cool for a few minutes before removing them from the muffin tin. Serve warm, garnished with additional Parmesan cheese and fresh herbs if desired.
