Keto Chocolate Mousse

Ingredients:

  • 1 cup heavy cream
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup keto-friendly sweetener (such as erythritol, monk fruit sweetener, or stevia, adjust to taste)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Optional: 1 tablespoon unsweetened almond milk (if needed to adjust consistency)

Keto Chocolate Mousse

Instructions:

  1. Prepare the Whipping Cream:
    • In a large mixing bowl, using a hand mixer or stand mixer, whip the heavy cream on medium-high speed until it starts to thicken and forms soft peaks. Be careful not to over-whip; stop when the cream is thick but still smooth.
  2. Mix the Cocoa and Sweetener:
    • In a separate bowl, sift together the unsweetened cocoa powder, keto-friendly sweetener, and a pinch of salt. This will help ensure that the cocoa powder and sweetener are evenly distributed and avoid lumps.
  3. Combine Ingredients:
    • Gently fold the cocoa mixture into the whipped cream. Use a spatula to fold the ingredients together until well combined and smooth. Be careful not to deflate the whipped cream too much.
  4. Adjust Consistency:
    • If the mousse is too thick, you can fold in a tablespoon of unsweetened almond milk to reach your desired consistency.
  5. Chill the Mousse:
    • Transfer the mousse to serving dishes or bowls. Chill in the refrigerator for at least 30 minutes to allow the mousse to firm up and develop its flavors.
  6. Serve:
    • Before serving, you can garnish with a few shavings of dark chocolate (sugar-free) or a dollop of whipped cream if desired.
