Keto Crackers with almond flour

Ingredients:

  • 1 ½ cups almond flour
  • 1 large egg
  • 1 tbsp olive oil (optional, for extra crispiness)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt (plus more for sprinkling on top)
  • 1/2 tsp paprika (optional, for flavor)
  • 1/4 tsp black pepper
  • 1 tbsp sesame seeds or poppy seeds (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Dough: In a large mixing bowl, combine the almond flour, garlic powder, onion powder, salt, paprika, and black pepper. Stir well to ensure the dry ingredients are evenly distributed.
  3. Add Wet Ingredients: Add the egg and olive oil to the dry mixture and stir until a dough forms. The dough should be slightly sticky but firm enough to handle.
  4. Roll Out the Dough: Place the dough between two sheets of parchment paper. Use a rolling pin to roll the dough out into a thin layer, about 1/8 inch thick. The thinner you roll the dough, the crispier the crackers will be.
  5. Cut the Crackers: Once rolled out, use a pizza cutter or sharp knife to cut the dough into small squares or rectangles. You can also use a cookie cutter for fun shapes. Transfer the cut dough onto the prepared baking sheet, keeping the crackers close but not touching.
  6. Add Toppings (Optional): If desired, sprinkle sesame seeds, poppy seeds, or extra salt on top of the crackers before baking.
  7. Bake the Crackers: Bake in the preheated oven for 10-12 minutes, or until the crackers are golden brown and crisp around the edges. Keep an eye on them, as they can burn quickly.
  8. Cool and Serve: Let the crackers cool completely on the baking sheet before removing them. They will continue to crisp up as they cool.

Storage:

Store these keto crackers in an airtight container at room temperature for up to 1 week. You can also freeze them for longer storage and reheat them in the oven to restore their crispness.
