Keto cheese puffs with bacon

Ingredients:

  • 1 cup shredded cheddar cheese (or any hard cheese like gouda or parmesan)
  • 2 large eggs
  • 1/2 cup cooked bacon, crumbled
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp baking powder (optional, for extra puffiness)
  • Salt and pepper to taste
  • 2 tbsp almond flour (optional, to add more structure)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare Bacon: If you haven't already, cook your bacon until crispy. Let it cool, then crumble it into small pieces.
  3. Mix the Batter:
    • In a medium bowl, whisk together the eggs until they are well-beaten.
    • Add the shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, and almond flour (if using). Mix until everything is well combined. The mixture should be thick but spoonable.
    • Season with salt and pepper to taste. You may want to go light on the salt since the bacon and cheese are naturally salty.
  4. Spoon the Mixture: Using a spoon or a small cookie scoop, drop the cheese mixture onto the prepared baking sheet. Space the puffs about 2 inches apart, as they will spread slightly during baking.
