KETO CREAM CHEESE CHICKEN TACOS

Ingredients:

For the  Filling:

  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 4 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

For Serving:

  • Lettuce leaves or low-carb tortillas
  • Shredded cheese
  • Diced tomatoes
  • Chopped onions
  • Sliced jalapeños (optional)
  • Fresh cilantro

Instructions:

  1. In a bowl, combine the softened cream cheese, sour cream, chili powder, cumin, garlic powder, salt, and pepper. Mix until well combined.
  2. In a skillet, heat the olive oil over medium heat. Add the shredded chicken and sauté for a couple of minutes until heated through.
  3. Lower the heat to medium-low and add the cream cheese mixture to the skillet with the chicken. Stir well to combine and let it cook for a few minutes until everything is heated and the flavors meld together.
  4. Assemble your tacos by placing a spoonful of the cream cheese chicken mixture onto a lettuce leaf or low-carb tortilla.
  5. Top the chicken mixture with shredded cheese, diced tomatoes, chopped onions, sliced jalapeños (if using), and fresh cilantro.
  6. Serve the Keto Cream Cheese Chicken Tacos immediately while the filling is still warm.
