Ingredients:

For the Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup powdered erythritol
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp vanilla extract

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract

For the Chocolate Pudding Layer:

  • 2 cups unsweetened almond milk
  • 1/2 cup powdered erythritol
  • 1/4 cup unsweetened cocoa powder
  • 2 large egg yolks
  • 1/2 tsp xanthan gum (to thicken)
  • 1/2 tsp vanilla extract

For the Whipped Cream Topping:

  • 1 1/2 cups heavy cream
  • 2 tbsp powdered erythritol
  • 1 tsp vanilla extract

Optional Garnish:

  • Shaved sugar-free chocolate or keto-friendly chocolate chips
  • Crushed keto nuts (e.g., pecans or walnuts)

Instructions:

  1. Prepare the Crust:
    • Preheat the oven to 350°F (175°C).
    • In a mixing bowl, combine the almond flour, powdered erythritol, melted butter, and vanilla extract until it forms a dough-like mixture.
    • Press the mixture evenly into the bottom of an 8x8 inch baking dish.
    • Bake for 10-12 minutes, or until the crust is lightly golden. Let it cool completely.
  2. Make the Cream Cheese Layer:
    • In a large bowl, beat the softened cream cheese, heavy cream, powdered erythritol, and vanilla extract until smooth and creamy.
    • Spread the cream cheese mixture evenly over the cooled crust.
  3. Prepare the Chocolate Pudding Layer:
    • In a medium saucepan, whisk together the almond milk, powdered erythritol, cocoa powder, and egg yolks over medium heat.
    • Continue stirring for 5-7 minutes until the mixture begins to thicken. Stir in the xanthan gum and vanilla extract, and cook for another 1-2 minutes until it reaches a pudding-like consistency.
    • Remove from heat and let the pudding cool slightly, then spread it evenly over the cream cheese layer.
  4. Whip the Cream Topping:
    • In a mixing bowl, whip the heavy cream, powdered erythritol, and vanilla extract until stiff peaks form.
    • Gently spread the whipped cream over the chocolate pudding layer.
  5. Chill and Serve:
    • Place the dessert in the refrigerator for at least 2-3 hours to set.
    • Before serving, optionally garnish with shaved sugar-free chocolate or crushed keto nuts.
