KETO CUSTARD (PASTRY CREAM)

Ingredients:

  • 2 cups unsweetened almond milk or coconut milk (full-fat for creamier custard)
  • 4 large egg yolks
  • 1/3 cup powdered erythritol or stevia (adjust to taste)
  • 2 tbsp unsalted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 tsp xanthan gum (optional, for thickening)
  • A pinch of salt

Instructions:

  1. In a saucepan, combine the almond or coconut milk and sweetener. Heat over medium-low heat, stirring until the sweetener has dissolved.
