Keto Fluffy Skillet Buns

Ingredients:

  • 1½ cups almond flour
  • 2 tablespoons coconut flour
  • 1 tablespoon baking powder
  • 1 teaspoon xanthan gum (optional, for fluffier texture)
  • ½ teaspoon salt
  • 3 large eggs
  • ¼ cup sour cream or Greek yogurt (for extra fluffiness)
  • 2 tablespoons melted butter (plus more for brushing)
  • 1 teaspoon apple cider vinegar (helps with fluffiness)
  • 1 cup shredded mozzarella cheese (optional, for extra richness)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Mix the Dry Ingredients:

  • In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, xanthan gum (if using), and salt.

3. Prepare the Wet Ingredients:

  • In a separate bowl, whisk the eggs, sour cream, melted butter, and apple cider vinegar until smooth and well combined.
  • If you're adding shredded mozzarella for extra richness, melt the cheese in the microwave for about 30 seconds and stir it into the wet mixture.

4. Combine the Wet and Dry Ingredients:

  • Slowly add the wet ingredients into the dry ingredients and mix until a dough forms. The dough should be thick but still slightly sticky.

5. Shape the Buns:

  • Grease a cast-iron skillet or any oven-safe skillet with butter or non-stick spray.
  • Divide the dough into 6-8 equal portions and shape each portion into a ball. Place the dough balls in the skillet, leaving a little space between each bun as they will expand.

6. Bake the Buns:

  • Brush the tops of the buns with melted butter.
  • Bake in the preheated oven for 18-20 minutes, or until the buns are golden brown on top and a toothpick inserted into the center comes out clean.

7. Serve:

  • Once baked, brush the buns with more melted butter for extra flavor.
  • Let them cool for a few minutes before serving warm.

Tips:

  • You can add herbs like garlic powder, rosemary, or thyme to the dough for extra flavor.
  • These buns freeze well. Simply let them cool completely, wrap in plastic wrap, and store in an airtight container in the freezer.
  • For a dairy-free version, replace the sour cream with coconut cream and skip the mozzarella cheese.
