Keto Low-Carb Philly Cheese Steak Casserole

Ingredients:

  • 1½ lbs ribeye steak or ground beef (thinly sliced or ground)
  • 2 tablespoons butter (or olive oil)
  • 1 large onion, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce (optional, for flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded provolone cheese
  • ½ cup heavy cream
  • Fresh parsley (for garnish)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

2. Cook the Steak or Ground Beef:

  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • If using thinly sliced ribeye steak, add it to the skillet and cook until browned, about 3-4 minutes. If using ground beef, brown the meat until fully cooked, breaking it apart as it cooks. Season with salt, pepper, garlic powder, and onion powder.
  • Remove the steak or ground beef from the skillet and set aside.

3. Sauté the Vegetables:

  • In the same skillet, add the sliced onions and bell peppers. Cook until softened and caramelized, about 5-7 minutes.
  • Add the minced garlic and cook for another minute until fragrant. Season with a pinch of salt and pepper.

4. Prepare the Cream Cheese Mixture:

  • In a large mixing bowl, combine the softened cream cheese, heavy cream, and Worcestershire sauce. Mix until smooth.
  • Stir in half of the shredded mozzarella and provolone cheese into the cream cheese mixture.

5. Assemble the Casserole:

  • In the greased baking dish, spread an even layer of the cooked steak or ground beef.
  • Layer the sautéed onions and bell peppers over the meat.
  • Pour the cream cheese mixture over the top, spreading it out evenly with a spatula.
  • Sprinkle the remaining shredded mozzarella and provolone cheese over the top of the casserole.

6. Bake the Casserole:

  • Bake in the preheated oven for 20-25 minutes, or until the cheese on top is bubbly and golden brown.

7. Serve:

  • Garnish with freshly chopped parsley and serve hot. This casserole pairs well with a simple green salad or steamed vegetables.

Tips:

  • You can use other cheeses like cheddar or Monterey Jack if you prefer.
  • For extra flavor, add mushrooms to the sautéed vegetables or sprinkle in some red pepper flakes for a bit of heat.
  • Store leftovers in an airtight container in the fridge for up to 3 days, and reheat in the oven or microwave.
