Keto Fruit Pizza

By deiv3 on September 6, 2024

The Keto Fruit Pizza is a delightful, colorful dessert that brings together the best of a classic fruit pizza without all the carbs. It features a buttery, low-carb crust, a creamy, tangy topping made with keto-friendly sweeteners, and an array of fresh, vibrant berries and fruits that fit perfectly within your keto lifestyle. This pizza is perfect for summer gatherings, special occasions, or when you want to impress your guests with a visually stunning yet healthy dessert.

What makes this Keto Fruit Pizza special is how it balances the richness of the crust with the freshness of the fruit. The almond flour crust is buttery and slightly crumbly, reminiscent of a traditional shortbread base, while the creamy topping, made with cream cheese and whipped cream, adds a rich layer of flavor. To keep it keto, you'll be using low-carb sweeteners like erythritol or monk fruit, and fruits like berries, which are naturally lower in carbohydrates.

Fruit pizzas are often associated with sugary glazes and high-carb crusts, but this keto version delivers the same indulgent flavors without derailing your low-carb goals. Plus, it's incredibly easy to make and can be customized with your favorite keto-friendly fruits. Not only does it taste delicious, but the vibrant colors of the fresh fruit also make it an eye-catching centerpiece at any gathering.

Whether you're on a keto diet or simply looking for a healthier dessert option, this Keto Fruit Pizza will satisfy your cravings while keeping you on track. It's light, refreshing, and bursting with flavor, making it a guilt-free treat that everyone will love!

Ingredients:

For the Crust:

  • 2 cups almond flour
  • 1/4 cup melted butter
  • 1/4 cup erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • Pinch of salt

For the Topping:

  • 8 oz cream cheese (softened)
  • 1/4 cup erythritol or monk fruit sweetener
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy whipping cream

For the Fruit Topping (Choose low-carb fruits):

  • 1/2 cup fresh raspberries
  • 1/2 cup fresh strawberries (sliced)
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh blackberries
  • Fresh mint leaves for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a round pizza pan or baking sheet with parchment paper.
  2. Prepare the crust: In a medium bowl, mix together the almond flour, melted butter, sweetener, vanilla extract, and salt until a dough forms. Press the dough evenly into the prepared pan, forming a circular crust about 1/4-inch thick.
  3. Bake the crust: Bake the crust for 10-12 minutes, or until it is golden brown and slightly firm to the touch. Allow it to cool completely before adding the topping.
  4. Make the topping: In a large mixing bowl, beat the softened cream cheese, sweetener, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then fold the whipped cream into the cream cheese mixture until fully combined.
  5. Assemble the pizza: Once the crust has cooled, spread the cream cheese mixture evenly over the top, covering the entire surface of the crust.
  6. Add the fruit: Arrange the berries and fruits of your choice over the cream cheese topping. You can create a pattern or simply scatter the fruits for a more rustic look. Garnish with fresh mint leaves if desired.
  7. Chill and serve: Place the assembled pizza in the refrigerator for at least 30 minutes to allow the topping to set. Slice and serve cold!
