What makes this Keto Jelly Slice special is how it combines textures: the crumbly almond crust, the creamy, smooth middle, and the light, refreshing jelly topping. The recipe is versatile and allows you to use different flavors for the jelly layer, so you can customize it with your favorite sugar-free flavors like raspberry, lemon, or strawberry.

This dessert is ideal for parties, special occasions, or simply when you want to enjoy a refreshing, guilt-free treat. Plus, it's relatively easy to make, and each slice is perfectly portioned to keep you on track with your carb goals.

Ingredients:

For the Crust:

  • 2 cups almond flour
  • 1/4 cup melted butter
  • 2 tbsp erythritol or monk fruit sweetener
  • 1/2 tsp vanilla extract

For the Cream Layer:

  • 8 oz cream cheese (softened)
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional, for a slight tang)

For the Jelly Layer:

  • 1 packet of sugar-free jelly mix (or use unflavored gelatin with low-carb flavoring)
  • 1 cup boiling water
  • 1/2 cup cold water

Instructions:

  1. Prepare the crust: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper. In a medium bowl, mix the almond flour, melted butter, sweetener, and vanilla extract until it forms a crumbly mixture. Press the crust mixture firmly into the bottom of the lined baking dish. Bake for 8-10 minutes, or until lightly golden. Remove and allow it to cool completely.
  2. Make the cream layer: In a large bowl, beat the softened cream cheese, sweetener, and vanilla extract until smooth. Gradually add the heavy cream and lemon juice (if using), and continue to beat until the mixture is thick and creamy. Spread the cream layer evenly over the cooled crust. Place the dish in the fridge to set while you prepare the jelly.
  3. Prepare the jelly: In a small bowl, dissolve the sugar-free jelly mix in 1 cup of boiling water, stirring until fully dissolved. Add 1/2 cup of cold water and mix well. Let the jelly cool to room temperature (but do not let it set) before pouring it over the cream layer.
  4. Chill to set: Carefully pour the cooled jelly mixture over the cream layer, ensuring an even layer. Place the dish in the refrigerator for at least 2-3 hours, or until the jelly is fully set.
  5. Serve: Once set, slice the jelly slice into squares or rectangles. Serve chilled and store leftovers in the fridge for up to 5 days.
