Keto Oven Fried Chicken

Ingredients:

For the Chicken:

  • 2 lbs chicken pieces (drumsticks, thighs, or breasts, skin-on for best results)
  • 1 cup buttermilk (or unsweetened almond milk mixed with 1 tablespoon lemon juice as a low-carb substitute)
  • 1 tablespoon hot sauce (optional, for extra flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Coating:

  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Baking:

  • 2 tablespoons olive oil or melted butter

Keto Oven Fried Chicken

Instructions:

  1. Marinate the Chicken:
    • In a large bowl or resealable plastic bag, combine the buttermilk (or almond milk mixture), hot sauce (if using), garlic powder, onion powder, paprika, salt, and black pepper.
    • Add the chicken pieces and coat them thoroughly. Cover the bowl or seal the bag and refrigerate for at least 1 hour, or overnight for the best flavor.
  2. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat. For extra crispiness, place a wire rack on top of the baking sheet and spray it lightly with cooking spray.
  3. Prepare the Coating:
    • In a shallow dish, mix together the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, dried oregano, salt, and black pepper.
  4. Coat the Chicken:
    • Remove the chicken pieces from the marinade, letting any excess drip off. Dredge each piece in the almond flour mixture, pressing gently to ensure an even coating.
  5. Bake the Chicken:
    • Place the coated chicken pieces on the prepared baking sheet or wire rack. Drizzle or brush the chicken with olive oil or melted butter.
    • Bake in the preheated oven for 35-45 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C). The cooking time may vary depending on the size of the chicken pieces.
  6. Serve:
    • Allow the chicken to rest for a few minutes before serving to let the juices redistribute.
