Keto pancakes Stuffed with bacon

Ingredients:

  • For the Pancake Batter:
    • 1 cup almond flour
    • 2 large eggs
    • 1/4 cup heavy cream
    • 1/4 cup unsweetened almond milk
    • 1 tbsp erythritol (or another keto-friendly sweetener)
    • 1 tsp baking powder
    • 1/2 tsp vanilla extract
    • Pinch of salt
  • For the Bacon:
    • 8 slices of bacon (cooked until crispy and crumbled)
  • Additional:
    • Butter or coconut oil for cooking

Instructions:

  1. Prepare the Bacon:
    • Cook the bacon in a skillet or oven until crispy. Drain on paper towels and crumble into small pieces. Set aside.
  2. Make the Pancake Batter:
    • In a medium bowl, whisk together the almond flour, erythritol, baking powder, and salt.
    • In another bowl, beat the eggs, then add the heavy cream, almond milk, and vanilla extract. Mix well.
    • Combine the wet and dry ingredients, stirring until smooth. Gently fold in the crumbled bacon.
  3. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or coconut oil.
    • Pour 1/4 cup of pancake batter onto the skillet, spreading it into a round shape. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.
    • Flip the pancake and cook for an additional 1-2 minutes, or until golden brown and cooked through.
    • Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
  4. Serve:
    • Serve the pancakes warm. Optionally, you can top them with a pat of butter, sugar-free syrup, or additional crumbled bacon if desired.

Tips:

  • For extra flavor, you can add a sprinkle of chopped chives or a pinch of garlic powder to the batter.
  • Ensure your skillet is properly preheated for even cooking and to achieve a golden-brown color on the pancakes.

Storage:

Store leftover stuffed pancakes in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.
