Keto Pizza Roll‑ups

Ingredients:

  • 2 cups shredded mozzarella cheese
  • 1 cup almond flour
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ cup low-carb pizza sauce (or marinara sauce)
  • 20-25 slices pepperoni
  • 1 cup shredded mozzarella cheese (for filling)
  • Fresh basil or parsley (for garnish)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Make the Dough:

  • In a microwave-safe bowl, melt 2 cups of shredded mozzarella cheese in 30-second intervals until fully melted and stretchy.
  • Stir in the almond flour, egg, baking powder, garlic powder, and Italian seasoning. Mix until the ingredients form a dough-like consistency. You may need to knead the dough with your hands to fully combine everything.

3. Roll Out the Dough:

  • Place the dough between two sheets of parchment paper. Use a rolling pin to roll the dough into a thin rectangle (about ¼ inch thick).
  • Trim the edges if needed to get a neat rectangle shape.

4. Assemble the Roll-Ups:

  • Spread a thin layer of low-carb pizza sauce over the dough, leaving a small border around the edges.
  • Arrange the pepperoni slices evenly over the sauce.
  • Sprinkle 1 cup of shredded mozzarella cheese on top of the pepperoni.

5. Roll the Dough:

  • Starting from one end, carefully roll the dough into a tight log shape, like a jelly roll.
  • Slice the log into 8-10 equal pieces, depending on the size of the roll-ups.

6. Bake the Roll-Ups:

  • Place the roll-ups on the prepared baking sheet, cut-side up.
  • Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and golden.

7. Serve:

  • Once baked, let the pizza roll-ups cool slightly. Garnish with fresh basil or parsley, and serve with extra pizza sauce for dipping if desired.
