- ¼ cup mushrooms, sliced
- ¼ cup green onions, chopped
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp red pepper flakes (optional)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions: - Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil and set aside.
- Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Drizzle the insides with olive oil and season with salt and pepper. Place the peppers upright in the prepared baking dish.
- Cook the Meat: In a large skillet over medium heat, cook the Italian sausage (or ground beef) until browned, breaking it up into small crumbles. Drain any excess grease, then add the marinara sauce, oregano, garlic powder, onion powder, and red pepper flakes. Simmer for 2-3 minutes until well combined. Remove from heat.
- Stuff the Peppers: Spoon the sausage mixture into each of the prepared bell peppers, filling them about halfway. Add a layer of shredded mozzarella cheese, followed by pepperoni slices, black olives, mushrooms, and green onions. Then top off with more sausage mixture and finish with a mix of shredded mozzarella and Parmesan cheese.
- Bake the Peppers: Cover the stuffed peppers loosely with foil and bake for 25-30 minutes, until the peppers are tender and the cheese is melted and bubbly. Remove the foil during the last 5 minutes to allow the cheese to brown slightly.
- Serve: Remove from the oven and let cool for a few minutes before serving. Garnish with extra green onions or a sprinkle of Parmesan if desired.
