Ingredients

For the bread:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1/4 cup baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated erythritol or other keto sweetener
  • 1/2 cup keto sweetened condensed milk (recipe below)
  • 1/2 cup unsweetened almond milk or coconut milk
  • 4 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract

For the keto sweetened condensed milk:

  • 1/2 cup heavy cream
  • 1/4 cup granulated erythritol or other keto sweetener
  • 1 tablespoon butter
  • 1/4 teaspoon vanilla extract

Instructions

1. Prepare the keto sweetened condensed milk:

  1. In a small saucepan, combine the heavy cream, sweetener, and butter.
  2. Cook over medium heat, stirring frequently, until the mixture reduces by about half and thickens, about 10-15 minutes.
  3. Remove from heat and stir in the vanilla extract.
  4. Let it cool before using. It will thicken further as it cools.

2. Preheat your oven:

  • Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.

3. Prepare the bread batter:

  1. In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, salt, and sweetener.
  2. In a separate bowl, mix the eggs, melted butter or coconut oil, almond milk, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and mix until well combined.
  4. Gently fold in the keto sweetened condensed milk.

4. Bake the bread:

  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

5. Cool and serve:

  • Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  • Slice and enjoy!

Feel free to adjust the sweetness to your taste. This bread should be moist and slightly sweet, perfect for a keto-friendly treat.
