Roasted Vegetable Couscous With Harissa Dressing & Chicken Breast

午前中はとても良いお天気でしたが、お昼過ぎから突然曇り始めました。金曜日の夕方までは似たようなお天気らしく、金曜日の夕方から土曜日にかけては太陽が顔を出す予報です。でも、日曜日はまた雨かも、なので、いずれにしても週末はお天気はあまり良くはなさそう、残念。

It was lovely and sunny until about lunch time but then it suddenly became very cloudy, it's expected to be grey until Friday evening.  At the moment, the forecast says it'll get sunnier in the evening on Friday but rain again on Sunday.  I guess it won't be great this weekend, which is a shame for us as we are going away.

今日は偏頭痛大丈夫!とほっとしていたのに、夕方またやってきました。やれ、やれ。

I was so glad that I didn't have migraine today but I started getting it in the evening, not good...

 

今日の夕食は、ディリアスミスのレシピの「Roasted Vegetable Couscous With Harissa Dressing」。一時期良く作っていましたが、最近は忘れていてたまにふと思い出して作っています、クスクスはイメージほど体に良いわけではないみたいですが(パスタと同じ)お野菜がたっぷり食べられるのが良いです。レシピ通りではなく、フェンネルやオリーブやケイパーは入れず、ゴートチーズも加えずに仕上げています。我が家では良く、チキンの胸肉をニンニク、レモン汁、オリーブオイルでマリネしたものを焼いたものと一緒にいただきます。こちらの茄子は巨大なので1個、ズッキーニもそこそこ大きいので1個、パプリカは2個、玉ねぎ1個、プチトマト適量、ニンニク(皮付きで)5、6片に塩胡椒をしてオリーブオイルをかけて柔らかく甘みが出るまでオーブンで焼きます。切る大きさにもよりますが、今日は30分くらい焼きました。お野菜がとても甘くなって美味しい。2人分には多いのですが、日にちが経っても美味しくいただけます。そして、ハリッサ・ドレッシングがロースト野菜にもクスクスにも良く合います(わたしはレシピほどオリーブオイルは使いません、適当です)。このドレッシングは、チキンにもケバブにも良く合うので、我が家では頻繁に作ります。美味しい夕食でした。

Today's dinner was "Roasted Vegetable Couscous With Harissa Dressing" from Delia Smith's recipes.  I used to cook this quite often but I now tend to forget it, but now and again I remember.  Although couscous isn't as good for you as people in general tend to think (it's pasta so not that great) but you can have so much vegetables.  I don't follow the recipe totally, I don't use fennel, olives or caper and don't add goat cheese.  We tend to have this with chicken breast (marinaded in garlic, lemon juice & olive oil then cooked).  Aubergines in England are huge so I use just one, also courgettes are large so again just one but use 2 peppers, 1 onion, some (maybe about 20) petit tomatoes and 5 or 6 cloves of garlic with skin on.  All I do is to sprinkle with salt and pepper then coat with olive oil and roast in the oven for 30-40 minutes depending on the sizes.  Vegetables become very sweet and delicious.  There is too much for 2 people for one meal but it tastes good for a good few days.  The dressing goes with it very well (although I don't use as much olive oil as in the recipe), it goes very well with chicken and kebabs so I often make this dressing.  It was a delicious meal.
