Here's an awesome collection of casseroles you could make ine for dinner and one for the freezer. Of course, you need to make sure you (and your family) will enjoy them. Below will be the ones that stood out to me.
SALSA VERDE CHICKEN CASSEROLE: Tex-Mex your thing. This casserole has it in one pan. Salsa verde is a salsa with tomatilloes instead of tomatoes. Tomatilloes are related to the gooseberries. (Hernedez brand has a great authentic product line. Of course, you could make it yourself.)
CHIPOTLE MAC & CHEESE: This is a spicy dish. You can adjust the heat as you (and your family) likes. Just remember cheese will take to the heat.
TACO SALAD CASSEROLE: Okay, maybe I should have some tacos. Or anything passable as breakfast.
POT PIES: There are three pot pie recipes here that would be a great way to use up leftover chicken or turkey.
VEGGIE CASSEROLES: These casseroles are a great way to get your family or yourself to eat veggies. Theres a vegetable based lasagna.
PEAR-STUFFED FRENCH VANILLA TOAST: This sounds like a slam dunk for favorite breakfast or dessert favorite. You got pecans, raisins, vanilla, cinnamon and melted French Vanilla Ice Cream. Okay that was a new one to me. It still sounds delicious.
There are pasta bakes here. I focused on the ones that stood out for having potential.
