The other day I was in the fridge trying to decide what to do with my leftovers. I have a cauliflower and a couple of courgettes I hadn't used in other recipes. Therefore I decided to throw the two together and add a few other ingredients too. The soup was delicious for a leftover meal and of course, I had to share the recipe with you. - Chopping board
- Baking tray
- Measuring jug
- Blender
- Teaspoon
- Saucepan
Ingredients - Cauliflower x 1 small
- Courgette x 2
- Onion x 1
- Chicken or vegetable stock x 600mls
- Milk x 400mls (your choice)
- Parmesan cheese or nutritional yeast x 2 - 4 tbsps
- Dried mixed herbs x 1 tsp
- Salt and pepper to taste
- Oil for the baking tray
Method - Preheat the oven to 180°C or gas mark 5 and put the baking tray in at this point too.
- Cut the leaves away from the cauliflower and then slice into small florets.
- Peel the courgettes and slice into 1 centimetre cubes.
- Now peel the onion and cut into quarters.
- Remove the preheated baking tray from the oven and put the vegetables into it.
- Drizzle over the oil and sprinkle with salt and pepper to your tastes.
- Toss all these ingredients together.
- When everything is coated in the oil, salt and pepper place the baking tray back into the preheated oven.
- Cook for about 25 - 30 minutes or until the vegetables are golden brown around the edges.
- Once the veg is golden brown remove from the oven and leave to cool.
- When the vegetables are cool enough to touch, place in the blender.
- Pour in the stock and milk.
- Then add in the dried mixed herbs too and more salt and pepper if necessary.
- Blend all of these ingredients together.
- Depending on how big your blender is you may need to blend the soup in two parts.
- Once all the ingredients are blended pour them into a large saucepan and heat through.
- Then serve with cheesy bread or a chickpea flour wraps and enjoy.
Roasted Cauliflower and Courgette Soup Roasted Cauliflower and Courgette Soup was a surprisingly tasty soup. It was very easy to prepare and cook. Plus it can be made in advance of a meal and frozen for another occasion. It also made delicious leftovers as well. I ate mine with chickpea flour wraps and my husband Howard and son Ted ate theirs with cheesy toast. However you decide to eat this meal as always please enjoy.
