Sticky BBQ Drumstick/Thighs

The British weather is never guaranteed. It can be like four seasons in one day. Especially in the summer months. I like to have summer meals on hand to help keep our spirits up on the rainy days. Chicken is always a huge hit around here. My husband Howard and son Ted are massive fans of chicken and BBQs. I knew this dinner would be well received by my little family and I was not wrong. They loved it and we hope you will too. Below is a video and recipe for you.

Sticky BBQ Drumstick/Thighs

Serves 4

Equipment

  • Mixing bowl
  • Stirring spoon
  • Tablespoon
  • Baking tray

Ingredients

  • Chicken drumsticks/thighs x 500g
  • BBQ Sauce x 2 tbsps
  • Honey x 2 tbsps
  • Tamari x 2 tbsps
  • Salt and pepper to taste
  • Rice or plain flour x 1 tbsp
  • Almond flour or breadcrumbs x 2 tbsps

Method

  • Pour the BBQ sauce, honey and tamari into a bowl.
  • Sprinkle in the salt and pepper to taste.
  • Mix these ingredients together.
  • Set this sauce aside.
  • Remove all the packaging from the chicken.
  • Optional but you can score down the side of the drumstick and thigh and remove the skin.
  • Put the flours into two separate bowls.
  • Pat dry with the kitchen towel the chicken.
  • Put the chicken into the bowl with the rice or plain flour.
  • Roll the drumsticks or thighs until it is covered in the flour.
  • Dip the drumsticks or thighs until is it covered in the sticky BBQ sauce.
  • Finally roll the drumsticks or thighs in the breadcrumbs or almond flour.
  • Place the drumstick or thigh onto a plate.
  • Continue to do this with the rest of the chicken until all the pieces are coated.
  • Put the pieces onto a plate or chopping board and place them in the fridge for 30 minutes or overnight.
  • Preheat the oven to 180°C or gas mark 5 and put both the baking trays in at the same time.
  • Once the oven has preheated remove the baking trays from the oven.
  • If necessary oil the baking tray and then place the chicken in.
  • Put the chicken back into the oven and cook for about 25 - 30 minutes or until the juices run clear and the coating is golden brown.
  • You can check the juices are clear by using a skewer and piercing the chicken flesh with it.
  • If the juice run out clear from the chicken then it's cooked.
  • Remove from the oven and let to rest for 5 - 10 minutes.
  • Then serve with chips or a side of your choice.
  • Finally enjoy.

Sticky BBQ Drumstick/Thighs was a delicious meal that we all enjoyed. It can be prepared the day before or on the day. The cooking was also easy and any leftovers, if you have any, are delicious as well. You could prepare these drumsticks/thighs and freeze them. I would use the plain flour or a gluten free alternative as it's never good to freeze rice flour. These drumsticks/thighs you can also cook them off and freeze them as well. Personally I prefer to eat food cooked fresh on the day. However you decide to eat this dish, as always, please enjoy. Thank you xxx
