We are finally into the swing of summer, and I could not be happier about it. Last week we came home from the mountains and dropped our son off at camp for the week. It was a quiet week without him, but we kept busy with friends and different activities. This weekend we golfed on Friday and then went out for dinner and to a party on Saturday. Tonight we hosted my parents for some al fresco dinner. This week we will busy with various Stampede events, golf and camp. We are planning on eating at home Sunday-Thursday, but in the summer plans change on the daily. This weekend we are having a date night and attending two Stampede events. - Grilled chicken from Lina's market, I served these with a grilled pasta salad, I used this recipe for inspiration. I boiled the pasta and grilled the veggies then tossed them together and added the chimichurri. It was delicious! I have made this pasta salad twice in the last 10 days, it is going to be a summer staple. MAKE IT NOW
- Pork souvlaki from @themediterraneandish, I will serve these with steamed rice and salad.
- Mediterranean burgers from @fitfoodiefinds, I will serve these with some fries and a green salad.
- Italian chopped salad from @weelicious I am going to serve this salad in or on a warmed pita. I am thinking of a pita pizza salad or a pita salad sandwich. It is supposed to be so hot today, so I am trying to keep my cooking cool by not using any appliances.
- Grilled sausage with peach feta salad from @walderwellness
This week it will be too hot to bake! Here are some great no-bake recipes: cherry cheesecake, Oreo ice cream sandwiches, raspberry tiramisu, ice cream cupcakes and peanut butter pie.
