It's dinner time. If you cook a lot, like me, then sometimes you just run out of ideas on what to cook. Run out of time, there is always so much to do. But your people are hungry. You're hungry. Ordering out is costing an arm and a leg these days, and are you really guaranteed a good meal? A delicious meal? A healthy meal? You just don't even know. I personally cook my own food almost every day, I know where the ingredients come from, and quite honestly, it is just more cost effective. So. I don't really ever run out of ideas, because I am always looking up recipes and save them in my phone, but not everyone is that dedicated and quite frankly has the time for it. At this point I hope you are following me, And new dinner ideas are always on the way for you. This dish is easy, delicous, and it will feed a whole family, or it will give you plenty if you are meal planning.
What you'll need:
- 1 pound ground beef
- 1 tbsp olive oil
- 1 red onion, chopped
- 2 tbsp garlic, chopped
- 1 (28oz) can crushed tomatoes
- 1 cup chicken broth
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/4 tsp black pepper
- 1 pack of frozen cheese Ravioli
- 5 oz fresh baby spinach
- 4 oz shredded mozzarella cheese (or more)
- 2 to 4 oz grated parmesan cheese
- fresh basil leaves
Add oil to a cast-iron skillet, and cook ground beef over medium heat until browned. Add salt and pepper (plus any seasonings you like to usually use for ground beef). Remove from skillet and set aside. Wipe skillet with a paper towel and heat more olive oil and the chopped red onions. Cook until tender, about 5 to 8 minutes over medium/low heat.
Add garlic and cook for another minute. Add crushed tomatoes, salt, pepper and Italian seasoning and chicken broth.
Add ravioli. Bring to a boil, cover, and reduce heat to low. Simmer for about 8 minutes, until ravioli are tender. Add baby ground beef. Preheat oven to broil.
Add baby spinach and stir. Simmer until spinach is wilted and incorporated. Top with mozzarella and parmesan. Add the skillet in th bottom of your stove and broil until the cheese is melted and lightly browned. Add basil leaves for garnish and served hot.
