Keto broccoli cheese bites

Ingredients:

  • 1 1/2 cups steamed broccoli, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare Broccoli: Steam or microwave the broccoli until tender. Drain any excess water and finely chop the broccoli into small pieces.
  3. Mix the Ingredients:
    • In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated parmesan cheese, almond flour, egg, garlic powder, onion powder, salt, and pepper.
    • Stir until everything is well combined and the mixture holds together. The almond flour will help bind the mixture and give it structure.
  4. Form the Bites:
    • Using a spoon or a small cookie scoop, form the mixture into small balls or patties, about 1-1.5 inches in diameter. Place them on the prepared baking sheet, spacing them about 1 inch apart.
  5. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the bites are golden brown and crispy on the outside. They should be firm to the touch and have a nice golden color.
  6. Cool and Serve:
    • Let the broccoli cheese bites cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
    • Garnish with chopped fresh parsley if desired, and serve warm.

Tips:

  • Make sure to drain the broccoli well to avoid excess moisture, which can make the bites soggy.
