Keto Broccoli with Creamy Cheese Sauce

Ingredients:

  • 1 lb (450g) fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tbsp cream cheese
  • 1 tbsp unsalted butter
  • 1 clove garlic, minced
  • 1/4 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. Prepare the Broccoli:
    • Steam or blanch the broccoli florets until tender-crisp, about 4-5 minutes. Drain and set aside. If you prefer a more tender texture, you can steam the broccoli a bit longer.
  2. Make the Cheese Sauce:
    • In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
    • Reduce the heat to low and add the cream cheese. Stir until the cream cheese is fully melted and combined with the butter.
    • Slowly pour in the heavy cream, stirring continuously to ensure a smooth mixture. Increase the heat slightly and bring to a gentle simmer, allowing the mixture to thicken slightly.
    • Once the cream mixture is slightly thickened, add the shredded cheddar cheese and grated Parmesan cheese. Stir until the cheeses are fully melted and the sauce is smooth.
    • Season with paprika, salt, and pepper to taste. Adjust the seasoning as needed.
  3. Combine and Serve:
    • Gently toss the steamed broccoli in the cheese sauce until well coated.
    • Transfer the broccoli and cheese sauce to a serving dish.
  4. Optional Baking:
    • For a baked version, preheat your oven to 375°F (190°C). Transfer the broccoli and cheese sauce to a baking dish, sprinkle with extra cheese or breadcrumbs if desired, and bake for 10-15 minutes, until bubbly and golden on top.
  5. Serve:
    • Serve the broccoli with creamy cheese sauce warm, either as a side dish or a hearty snack.
