Keto Snowballs cookies

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered erythritol (or another keto-friendly sweetener)
  • 1/4 cup finely chopped nuts (optional, like pecans or walnuts)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Extra powdered erythritol for rolling (about 1/4 cup)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix the Dough:
    • In a large bowl, cream together the softened butter and powdered erythritol until light and fluffy.
    • Add the vanilla extract and mix well.
    • Gradually add the almond flour and a pinch of salt. Stir until the dough comes together. If using, fold in the finely chopped nuts.
  3. Form the Cookies:
    • Scoop out small portions of dough (about 1 inch in diameter) and roll them into balls. Place the balls on the prepared baking sheet, spacing them about 1 inch apart.
    • Gently press down on each ball with the back of a spoon to slightly flatten them.
  4. Bake:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still be soft, but they will firm up as they cool.
  5. Roll in Sweetener:
    • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
    • Once cooled, roll the cookies in the extra powdered erythritol to give them the snowball effect.
  6. Serve:
    • Serve the cookies at room temperature. Store leftovers in an airtight container.

Tips:

  • For a more festive flavor, you can add a pinch of cinnamon or nutmeg to the dough.
  • If the dough is too crumbly, add a tablespoon of almond flour at a time until it holds together better.

Storage:

Store these keto snowball cookies in an airtight container at room temperature for up to 5 days. They also freeze well; just place them in a freezer-safe container or bag for up to 3 months. Let them thaw at room temperature before serving.
