Keto Magic Ice‑Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk (or another low-carb milk alternative)
  • 1/2 cup erythritol (or another keto-friendly sweetener, adjust to taste)
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/2 cup unsweetened cocoa powder (for chocolate flavor)
  • Optional: 1/2 cup chopped nuts or low-carb chocolate chips (for mix-ins)

Keto Magic Ice-Cream

Instructions:

  1. Mix Ingredients:
    • In a medium mixing bowl, combine the heavy cream, almond milk, erythritol, vanilla extract, and salt. If you're making chocolate ice cream, also add the unsweetened cocoa powder at this stage.
  2. Blend:
    • Whisk the mixture until the erythritol is fully dissolved and the ingredients are well combined. For a smoother texture, you can use an electric mixer or blender.
  3. Chill:
    • Place the mixture in the refrigerator for about 30 minutes to chill. This helps it freeze more evenly.
  4. Freeze:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. Typically, this takes about 20-30 minutes.
  5. Add Mix-ins (Optional):
    • If you want to add nuts or chocolate chips, fold them into the ice cream during the last 5 minutes of churning.
  6. Serve:
    • Once the ice cream reaches a soft-serve consistency, you can serve it immediately. For a firmer texture, transfer the ice cream to an airtight container and freeze for an additional 2-3 hours.
  7. Storage:
    • Store any leftover ice cream in an airtight container in the freezer. Let it sit at room temperature for a few minutes before serving to soften slightly.

Tips:

  • Consistency: If you don't have an ice cream maker, you can still make this recipe. Pour the mixture into a shallow dish and freeze, stirring every 30 minutes until it reaches a creamy consistency.
  • Flavor Variations: Feel free to experiment with different extracts or spices, such as almond extract or cinnamon, to create your own unique flavors.
