Keto Snickers Brownies

Combining the rich, fudgy goodness of brownies with layers of caramel, peanuts, and a chocolate drizzle, this recipe gives you all the flavors of a Snickers bar without the sugar. It's the ultimate indulgence for those following a keto diet, offering a delicious blend of textures — chewy, crunchy, and smooth. Perfect for a treat or special occasion, these brownies will satisfy your sweet tooth without knocking you out of ketosis.


Ingredients:

For the Brownie Layer:

  • 1/2 cup almond flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/2 cup erythritol (or preferred keto sweetener)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • Pinch of salt

For the Caramel Layer:

  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1/4 cup allulose or another keto-friendly caramel sweetener
  • 1 teaspoon vanilla extract
  • 1/3 cup peanuts (unsalted, roasted)

For the Chocolate Topping:

  • 1/4 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil

Instructions:

  1. Prepare the Brownie Layer:
    Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper. In a medium bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt. Add the melted butter, eggs, and vanilla extract, and mix until combined.
  2. Bake the Brownies:
    Pour the brownie batter into the prepared dish and smooth the top. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean. Let the brownies cool in the pan.
  3. Make the Caramel Layer:
    In a small saucepan, melt the butter over medium heat. Stir in the allulose and let it cook for 2-3 minutes, stirring occasionally, until it turns golden. Slowly add the heavy cream and vanilla, stirring constantly until thickened, about 3-5 minutes. Remove from heat and fold in the peanuts. Let the caramel cool slightly.
  4. Spread the Caramel Layer:
    Once the brownies are cool, spread the peanut-caramel mixture evenly over the top.
  5. Prepare the Chocolate Topping:
    In a microwave-safe bowl, melt the sugar-free chocolate chips with the coconut oil in 30-second intervals, stirring in between, until smooth.
  6. Assemble:
    Drizzle the melted chocolate over the caramel layer, ensuring even coverage. Refrigerate for at least 30 minutes to set.
  7. Serve:
    Once set, cut the brownies into squares and serve chilled for the best texture.
