Ingredients:

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup grated parmesan cheese (or mozzarella for a milder flavor)
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon dried oregano or Italian seasoning
  • 2 tablespoons olive oil or coconut oil for frying
  • Sour cream or keto-friendly dipping sauce for serving (optional)

Instructions:

  1. Prepare the zucchini:
    • Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is crucial to ensure the fritters stay crispy and don't fall apart.
  2. Mix the fritter batter:
    • In a large mixing bowl, combine the grated zucchini, eggs, almond flour, parmesan cheese, minced garlic, salt, pepper, and optional seasonings like onion powder and oregano. Stir until everything is well mixed.
  3. Form the fritters:
    • Heat a large skillet over medium heat and add the olive oil or coconut oil for frying.
    • Scoop about 2 tablespoons of the zucchini mixture and form it into a small patty. Gently place it in the hot skillet, pressing down lightly to flatten.
  4. Cook the fritters:
    • Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Be careful not to overcrowd the pan, and work in batches if necessary. Add more oil if needed between batches.
  5. Drain and serve:
    • Once the fritters are cooked, transfer them to a plate lined with paper towels to drain any excess oil. Repeat with the remaining batter.
