Ingredients:

For the Donuts:

  • 1½ cups almond flour
  • 2 tablespoons coconut flour
  • ¼ cup erythritol (or preferred keto sweetener)
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • ¼ cup unsweetened almond milk (or any keto-friendly milk)
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (or coconut oil)

For the Glaze:

  • ¼ cup powdered erythritol (or your choice of keto powdered sweetener)
  • 2 tablespoons heavy cream
  • ½ teaspoon vanilla extract
  • Optional: 1 tablespoon unsweetened almond milk for a thinner glaze

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or butter.

2. Prepare the Donut Batter:

  • In a large mixing bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the eggs, almond milk, vanilla extract, and melted butter until well combined.
  • Slowly add the wet ingredients into the dry ingredients, mixing until smooth and no lumps remain. The batter should be thick but pourable.

3. Fill the Donut Pan:

  • Spoon the batter into a piping bag or a plastic ziplock bag with the corner snipped off.
  • Pipe the batter into the greased donut pan, filling each mold about ¾ full.

4. Bake the Donuts:

  • Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
  • Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

5. Make the Glaze:

  • While the donuts cool, prepare the glaze by whisking together the powdered erythritol, heavy cream, and vanilla extract in a small bowl until smooth. If you prefer a thinner glaze, add 1 tablespoon of unsweetened almond milk to reach your desired consistency.

6. Glaze the Donuts:

  • Once the donuts have cooled completely, dip each donut face-down into the glaze, allowing any excess to drip off.
  • Place the glazed donuts back on the wire rack and let the glaze set for 10-15 minutes before serving.

Tips:

  • For extra flavor, you can add a pinch of cinnamon or nutmeg to the donut batter.
  • If you don't have a donut pan, you can use a muffin pan and create "donut holes" by baking smaller portions of the batter.
  • For a chocolate glaze variation, add 1-2 tablespoons of unsweetened cocoa powder to the glaze mixture.
