Keto Sweetened Condensed Milk Bread

Ingredients:

For the Sweetened Condensed Milk:

  • 1 cup heavy cream
  • ¼ cup erythritol (or preferred keto sweetener)
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

For the Bread:

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 large eggs
  • ¼ cup melted butter
  • ¼ cup keto sweetened condensed milk (prepared from above recipe)
  • 1 teaspoon vanilla extract

Instructions:

1. Prepare the Sweetened Condensed Milk:

  • In a small saucepan, combine the heavy cream and erythritol. Heat over medium heat, stirring frequently, until the mixture starts to simmer.
  • Reduce the heat to low and continue to cook, stirring occasionally, for about 15-20 minutes, or until the mixture has reduced by half and thickened to a syrupy consistency.
  • Remove from heat and stir in the butter and vanilla extract. Let it cool completely before using.

2. Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.

3. Mix the Dry Ingredients:

  • In a medium bowl, whisk together the almond flour, baking powder, and salt.

4. Prepare the Wet Ingredients:

  • In a large mixing bowl, beat the eggs. Add the melted butter, ¼ cup of the prepared keto sweetened condensed milk, and vanilla extract. Mix until well combined.

5. Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. The batter will be thick.

6. Pour into the Pan:

  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.

7. Bake the Bread:

  • Bake in the preheated oven for 30-35 minutes, or until the bread is golden brown on top and a toothpick inserted into the center comes out clean.

8. Cool and Slice:

  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.

Tips:

  • If you prefer a slightly sweeter bread, you can add a bit more of the keto sweetened condensed milk to the batter.
  • You can also add flavorings like cinnamon or nutmeg to the batter for a different twist.
  • Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. This bread can also be frozen for longer storage.
